So What Makes Vitamin K So Special?

Most of us have heard of or even eaten Special K cereal but how much do you know about a very special K vitamin? Vitamin K is an amazing vitamin with equally amazing health benefits including its blood-clotting ability, its role in supporting bone health, cardiovascular health, brain health, blood sugar health and more.

For starters, vitamin K refers to fat-soluble compounds called anphthoquinones. We’ll focus on vitamin K1 and vitamin K2, since vitamin K3 is the synthetic form of vitamin K. Vitamin K1, also called phylloquinone, is the natural, plant form of this nutrient and can be found in dark-green leafy vegetables such as lettuce, cabbage, collard greens, broccoli, spinach, and turnip greens, as well as fruits such as kiwi and avocados. Vitamin K2, which goes by the name menaquinone, comes from healthy bacteria in the human gut as well as from certain foods—mostly grass-fed meat and dairy products as well as fermented foods.

Vitamin K2 can be further categorized, including the MK-4 and the MK-7 varieties. Most vitamin K found in the Western diet is MK-4, but MK-7 is a most readily metabolized form of K2. It can be found most abundantly in natto, a Japanese fermented soy dish; fermented foods such as sauerkraut; fermented cheeses and dairy foods such as grass-fed butter; and organ meats.

Vitamin K2 has a particularly interesting history, too. While studying the diets of healthy primitive people groups, Harvard-trained dentist Dr. Weston A. Price discovered a dietary “X Factor”—now known as vitamin K2—containing strong catalytic properties that help the body absorb and utilize minerals. Since then, we’ve learned that vitamin K2 supports healthy overall growth and development as well as reproductive, cardiovascular, bone & tooth health, blood sugar, skin and brain health.

Additionally, vitamin K2 is an excellent calcium regulator, which moves excess arterial calcium into bone tissue where it belongs and is needed, but removes it from the arteries where it doesn’t belong. Likewise, a recent study indicates that K2 in the form of MK-7 increases the percentage of osteocalcin—the protein in bones that is used as a marker for the bone formation process—in humans three times more powerfully than another form of vitamin K, K1, does. K2 also reduces heart unhealth in humans, while K1 does not. Interestingly, the list goes on and on of instances in which K2 outperforms K1.

Unfortunately, the dietary intake of vitamin K2 virtually disappeared with the onset of modern agriculture. Here’s why: vitamin K2 is found in the butterfat, organs and fat of animals consuming rapidly growing green grass, but disappears in cows fed grain and other feed that excludes the green grass they are designed to eat. Most modern agriculture methods are constructed to feed cows in feedlot fashion with grain, of course, so vitamin K2 fell off the radar for a time. Now it’s back, and we know more than ever about vitamin K, including the health benefits of vitamin K1 and vitamin K2.

Here are some recent Vitamin K findings:

  • Vitamin K supports healthy aging, has powerfully positive effects on the brain, and has significant coagulation and blood clotting abilities.
  • By keeping calcium where it belongs in the body, vitamin K supports cardiovascular health, bone health, brain health and more. For example, vitamin K2 is an excellent calcium regulator—moving excess arterial calcium into bone tissue where it belongs and is needed, but removing it from the arteries where it doesn’t belong.
  • Vitamin K supports healthy systemic inflammation levels, which benefits the body’s use of insulin and supports healthy blood sugar levels.
  • Studies show that vitamin K slows calcium loss by one-third in people who tend to lose calcium.
  • A recent study indicates that K2 in the form of MK-7 increases the percentage of osteocalcin—the protein in bones that is used as a marker for the bone formation process—in humans three times more powerfully than vitamin K1 does.
  • Inadequate healthy intestinal bacteria supplies can keep a person from properly assimilating K2, so make sure your intestinal bacteria is sufficient by including plenty of fermented, probiotic-rich foods.
