Chilled Ginger, Papaya & Strawberry Soup
– “Cool Down”

This delicious chilled soup balances the heat from Ginger, the light
pepper notes of Papaya, and the sweetness of ripe strawberries and
white grape juice to deliver a wonderful start to your meal or
sumptuous lunch fare. From a health standpoint, papaya is noted for
its antioxidant and vitamin C content, but also because it contains
the digestive enzyme papain, a potent enzyme that helps to break down
and digest protein.
Serves 1
Ingredients:
˝ medium-size ripe organic papaya
2˝ Tbsp fresh-squeezed organic lime juice
1 tsp minced fresh organic ginger
White grape juice, to taste (100% juice-not from concentrate)
4 large ripe organic strawberries, rinsed, hulled, and sliced
1. Using a spoon, scoop out and discard black seeds from papaya. Scoop
out the flesh and place in bowl of food processor or blender. Add lime
juice and ginger and puree until smooth. Sweeten with juice
concentrate if desired.
2. Pour soup into serving bowl; arrange sliced strawberries in center.
Serve cold. |
