Healthy Holiday Meal Recipe
– Mashed Orange Yams –

This delicious side dish is at home on your table
any day of the year, but it's an especially good accompaniment to your
holiday meal.
- Mashed Orange Yams
- 4 to 5 medium yams
- 3 Tbsp. butter
- 1 to 2 Tbsp. honey
- 1/3 to 1/2 cup orange juice
- 1/4 tsp. cinnamon
- Pinch of freshly grated nutmeg
- Celtic sea salt and pepper
Preheat oven to 375 degrees. Pierce yams in several
places with a sharp knife and bake until soft, about 50 minutes.
Remove from oven; when cool enough to handle, peel yams and place
flesh in a large bowl. Add all remaining ingredients and mash until
smooth. Adjust seasoning and serve hot.
Christine suggests sprinkling on chopped, raw pecans on top before
serving.
Yams and "True" Yams
When is a yam not a yam? When it's a sweet potato. Most "yams" in
the United States aren't yams at all, but varieties of orange-fleshed
sweet potatoes. "True" yams are found mostly in tropical climates,
have yellow or white flesh, and can weigh up to eight pounds each!
